Asian Chicken and Vegtable Stir Fry


Happy Holidays, UGF'ers! This season has been so busy for me, I apologize for neglecting my blogging duties!
I saw a great quote the other day that said: "You don't have to lose weight over the holidays, but you don't have to gain weight either."  What a great quote!  I encourage you to live by this during your holiday parties.  It's ok to cheat a bit, but keep up with your exercise, and make good choices when you're in control of your food! 
Now, on to today's recipe!  This one is perfect for people on the go!  It takes less than 30 minutes and most of it is microwaved! I love using vegetables that come in a sauce and adding to it.  It's a little high on the sodium, so make sure to have a tall glass of water along with this meal!

Shepherd's Pie





 Friday!  I know, I've been lax on blogging this week - but a girl's been busy!  Holidays are filled with visiting friends, late nights out, and wanting to sleep in!  Unfortunately, I haven't exercised as much as I would have liked this week, but tomorrow is a new day, and it's time to set that alarm and just get it done!

Holidays are also the time for comfort food.  As the wind gets colder, and rain turns into snow, something warm and fuzzy like shepherd's pie is the perfect winter meal!  This version uses lean ground turkey, plenty of veggies and sweet potatoes to keep it lean, yet filling and delish.

Turkey Burgers



Happy Monday!  Great weekend in UFG land.  Friday night, the mailman and I checked out a new bar in town called 1984.  Awesome place - good beers, and vintage arcade games!  I was very good and stuck to my calorie count, tracking each beer as I drank it so as to not go over my daily calorie intake!

Saturday night was my family's Italian 7 Fish Christmas Eve.  I took my food scale, weighed my meal, and still had enough calories left to have a few drinks and a slice of my Mimi's famous pound cake!
Just goes to show you that you CAN go out, socialize and have a good time, without ruining your diet!

Now, onto today's recipe.  Another burger!  This turkey burger uses grated zuchinni.  It not only ups the nutritional count, but it also ads some texture, bulk and I think moisture to lean turkey.  It's a great addition to a filling burger!

Garlic and Lemon Chicken Thighs


Happy Friday, UFG'ers!  This week has flown by - much like this year!  I feel like my friends and I are just getting over saying how much fun we had last NYE, and now we're booking this one!

At any rate, I've been seeing these Tyson Boneless, Skinless Chicken Thighs at the market, and I was curious about them.  Although the mailman isn't the biggest fan of dark meat, I love it, and this recipe seemed to be the perfect solution.  We both really enjoyed it, and it makes a fantastic Sunday dinner.  

I found this recipe in a Mediterranean cookbook that I have, and have lightened it up, UFG style!  If you love garlic like we do, you'll adore it.  It takes 20 cloves!  Yum! Recipe after the jump!

Buffalo Chicken Burgers


It's only recently that buffalo wings have become one of my top 5 favorite foods.  As a kid, I hated spicy food.  Even ground black pepper was too much.  Now, I crave it.  Especially wings!

Insider Tip:  The best thing on the Buffalo Wild Wings menu?  Naked Tenders with medium buffalo sauce and substitute buffalo chips for fries!  Pair it with one light beer, and you've got a night out that won't kill your waistline!

If you haven't noticed, I'm obsessed with anything that can put into burger form - and ground chicken is SO versatile (and I clearly stock up when its on sale)! These Buffalo Chicken Burgers really kick the craving for wings, and is far cheaper than going out to Buffalo Wild Wings!  The mailman and I eat it with celery of course, and you could even serve them with some baked sweet potato fries!  Enjoy!

BodyFit Media Link Armband

It was big weekend in the UnFatty Gaby household!  First, it was my anniversary with the Mailman!  We had so much fun, and I splurged quite a bit - but once a year won't kill me!
Second, we decorated for Christmas!  The tree is up, the bay window is decorated and we're really getting into the spirit of the season. 



Third, I finally started with my BodyFit Media armband!  The technology behind this thing is really incredible.  It tracks your steps, calories burned, and more.  You input the foods you have eaten, and based on calories burned, it lets you know how many more calories you need to eat that day to reach your goal.  Mine is 1lb per week, and my diet buddy Beth's goal is 1.5lbs per week.  If all goes well, I'll be to my goal weight by June! 
We both missed our calorie burn goal by a couple hundred, but it was Sunday after all, a day of rest!  Hopefully I can make up for it tomorrow with some extra calorie burning.  


 It will be an adjustment tracking everything I eat - even fruits and veggies which I'm not used to counting.   I look forward to sharing my progress with you to keep myself honest and accountable!

Tre's Stuffed Zuchinni Bites



Lots of news to share you all!
1) I'll finally be back to a regular blogging schedule!  Life is moving so quickly, I can hardly catch up.  This weekend, cooking is the name of the game.
2)  My good friend Beth and I have given ourselves quite the challenge.  We've both bought the BodyMedia Fit Armband System and are hoping for big results!  We will be starting on Sunday (conicindentally, the same day we are going to a grand opening for a new bar, oy!) and are hoping to get to our goal weights by the summer.  I'll be keeping you updated on our progress on here, and will surely dedicate an entire blog to the system as soon as I have it figured out!
3) We have our first guest recipe!  My lovely friend Theresa sent me this recipe for which she is quite famous for!  The mailman and I both loved them, so I'm happy to present to you: Tre's Stuffed Zucchini Bites!  Tre uses the Garlic & Herb Laughing Cow, I used half Chipotle and half Mozzarella & Basil Laughing Cow.  They all work wonderfully, so play around and find your favorite!

Pepperoni Pizza


Ok, UFG fans! It's that time between holidays, where you detox from one, to get ready for the other.  Now's the time to really go through this blog and plan some healthy meals! 

FACT: I love pizza.  Love.  Like....love.  I'm not sure I've ever met someone who doesn't.
FACT:  Pizza is probably one of the worst foods for you.

Don't worry.  I've UnFatty Gaby'd it.  Using whole wheat dough from Trader Joes (99 cents and makes 2 personal pizzas!) and turkey pepperoni, you'll save a ton of calories, without sacrificing on the taste!   Recipe after the jump!

Pumpkin Pie Bites


It's almost here!  The day before Thanksgiving is filled with short work days, traveling and kitchen prep for many.  Let me make your day a little easier with these super easy, super low-cal and delish Pumpkin Pie Bites!  Using Phyllo Dough instead of crust takes away the majority of the calories, and having them in portion controlled bites ensures you don't over eat!  I like to serve them with fat-free whipped topping and sugar free caramel sauce.

No blogging tomorrow, so have a wonderful Thanksgiving!  Go ahead, have some stuffing...why not?  Just remember - moderation is key!  Stick with white meat turkey, and peel off the skin!

Roasted Garlic "Mashed Potatoes"


It's Day 2 of Thanksgiving Week at UFG headquarters!
Much of your caloric intake on Thanksgiving is no doubt, from sides! Mashed Potatoes are a huge source of fat and calories:  starchy potatoes, sour cream, butter, heavy cream or whole milk....it's a mess of fatty deliciousness. 
I'm a mashed potato fiend, so based of the yummyness of the Baked Potato Soup, I came up with these delish Roasted Garlic "Mashed Potatoes."   Using one potato with the skin on, and 2 cloves of roasted garlic, they really do stand up to regular mashed potatoes!

Pumpkin Ravioli


Happy Thanksgiving Week, UFG fans!  This week, I'll be featuring some great Thanksgiving treats.

The mailman and I have a day packed full of family and eating on Turkey Day.  Although we are both Italian, my sister married into a wonderful Armenian family.  We start the day with the Italians and end it with Armenians.  Lots of food, lots of fun, and certainly lots of love! After two years of eating more lasagna and boreg than you can shake a stick at, this year, I'm on a mission to lighten things up.

While Pumpkin Ravioli isn't traditionally a Turkey Day staple, I think it would make a great, healthy addition to any table.  With the help of wonton wrappers, this meal is easy, delicious, and a great appetizer or side dish.   After making these, they quickly became one of my favorite dishes.  Recipe after the jump!

Chicken Broccoli Alfredo


If I had to narrow down my favorite noodle toppings, Alfredo, I think, would take the cake.  Ever since I was a kid, I've loved heavy, creamy sauces and would often get alfredo whatever when my family would go out to dinner. 
You know who makes a surprisingly good Alfredo?  Jenny Craig!  It was one of my favorite meals when I was on Jenny - and I've been trying to recreate it every since.  I'm not sure where I read/heard about using cream cheese in the base of the sauce, but it works, and it's delish!  Creamy, cheesy, garlicky, and everything Alfredo should be!
I make this sauce with shrimp, chicken, broccoli and....tofu?!  Yup!  Check out these noodles! 


These babies are 40 calories for the entire pack, so I tend to get Angel Hair to get more bang for your buck.  If you have textural issues, these aren't for you - but I love them, and it saves me a TON of calories with my pasta dishes.  I haven't tried it yet, but I'm sure they'd make a mean stir-fry. The mailman can't stand them, so he gets Ronzoni Smart Taste.  I've made this recipe both ways, so I hope you enjoy it as much as we do!

Loaded Baked Potato Soup



Happy Monday, UFG'ers! As you may have seen on my Facebook or Twitter, I entered this soup into an office cook-off last week. It didn't go well. Lesson? Never enter a low fat soup against things like Lobster Bisque (which ended up being delicious, yet store bought from Northeast Convenience store Wawa!), Cheddar Ale Soup and other creamy, high fat deliciousness. Don't get me wrong, everyone loved the soup - but it wasn't winning the award. Nonetheless, you'll love it, and by using both potatoes and cauliflower, you're waistline will also love it!

Balsamic Chicken





Happy Friday, friends! Time is flying by so fast, I feel like I barely have time to catch up on things.  When you're broke like me and the mailman, dinners are often of hodge podge of whatever's in the pantry.  Without the time/money to grocery shop, balsamic chicken was born!  A delicous discovery indeed, and it's definitely on the weekly rotation.  We love balsamic vinegar, and if you do too, than this recipe is must-have!  The sweetness of the cooked onions really helps balance out the tang of the vinegar and paired with mixed veggies and brown rice, it's a complete, healthy, fiber filled meal.

UFG Chicken Parm Burgers


Hey UFG fans - it's Two-4 Tuesday!  I got a request from my long-time buddy Amy K for Chicken Parm.  Luckily, I already this little gem in my repertoire.

I had set out to just make and photograph my Chicken Parm Burgers, but realized that this would be the 2nd time I referenced making homemade sauce.  So.. here, my friends, is my sauce!  It's easy, yummy, and can be left on the back burner on low until you're ready to use it!

Ingredients:
28oz No Salt Added Crushed Tomatos
8oz  No Salt Added Tomato Sauce
Chopped Basil (I used Dorot frozen herbs - a lifesaver! 2 cubes)
2 cloves garlic
1 small onion
1 tbsp Extra Virgin Olive Oil

Dice onions and garlic.  Put olive oil in pot with basil.  When hot, drop in garlic and onions and let sweat on medium heat - about 10 mins.  Add tomatos and simmer on low for at least 30 mins - I usually put it on the back burner and let simmer for about 45 mins - hour.  Add a dash of sea salt (it's much healthier than table salt or kosher salt!  I use this amazing gray sea salt - I've had this bottle for 2 years, which is how little you need to use.)

Dijon Pork


Happy Sunday, UFG fans!  I've got some great recipes lined up for you this week and had a great day of cooking yesterday!  
Dijon pork is one of the mailman's faves.  It's super simple, and actually adapted from a recipe I saw on another food blog years ago.  At only 164 calories per serving - it's a no - brainer!   Hope you enjoy it as much as we do.

In other news, I finally have one of those fancy internet phones! Yesterday, I got my Iphone 4s in the mail! So I promise better quality pictures after the next few blogs! It's a work in progress....

On to today's UFG recipe:
Potato skins and wings are probably two of my favorite bar snacks. (UFG wings coming soon!!). The problem is obvious - one potato skin has more calories than I like to eat in a meal! You KNOW I have a solution! Using sweet potatoes and fat free cream cheese, you'll love these Sweet Potato Skins!

Meaty Lasagna


With the unseasonal snow happening outside, I was more than happy to be cooking inside this weekend!  Brrrr!
I have a few truths in my life that I feel pretty strongly about.  Allow me to share them with you:

1) Mushrooms will never replace meat.  Although I enjoy an occasional portobello burger - it's not meat, and it's not a burger.   Mushrooms can, however, enhance and "beef up," so to speak, your meat portion. (ha! see what I did there?!)

2) Red sauce should NEVER come out of a jar.    If you have time to open and heat a jar of store bought sauce, you have time to make real sauce.  Sauce is: 1 can of crushed tomatoes (salt free!), garlic, onions, and basil.  Done. Easy.  Sauce is also free calories.  Unless it comes from a jar. 

3) Grated cheese (Romano, Pecorino, Parmesan etc) doesn't come from a green can.  Please don't even come near me with a green can and call it cheese. Locatelli Romano cheese is 20 calories per tbsp, please just use the real thing.

Chicken Quesadilla

Welcome to UnFatty Gaby!

Hi there, new friends!  I'm so excited to be starting this blog and sharing my wonderful discoveries with all of you.  As it says in the About Me - I really flippin' love eating.  It's pretty much my best quality.  If you can think of some weird obscure diet, I've probably been on it.  Grapefruit diet?  Yup.  Atkins?  Of course!  Combat Fat?  You betcha - and it even came with some contraption that pinched your arm fat to tell you how obese you were!

I know what you're saying - "What's the point, fatty!?"  Well, meanie-pants, the POINT is to be UnFatty!  I've picked up tips, tricks and recipe ideas along my diet journey - from South Beach to Jenny Craig - I've learned a lot about nutrition.  I'm taking my favorite parts of each program, and starting my own - the UnFatty Gaby!  

I promise deliciousness and bona fide easiness and cheapness!  (I also happen to be broke most of the time.)  All my recipes have been Mailman approved - so you KNOW they're awesome! (Who the hell is the Mailman?  It's my super awesome extra special man friend for life!)
