Dijon Pork

Happy Sunday, UFG fans!  I've got some great recipes lined up for you this week and had a great day of cooking yesterday!  
Dijon pork is one of the mailman's faves.  It's super simple, and actually adapted from a recipe I saw on another food blog years ago.  At only 164 calories per serving - it's a no - brainer!   Hope you enjoy it as much as we do.

4 –5 4oz pork loin chops (I got a center cut pork loin and cut it into 4oz portions)
3 tbsps of Dijon mustard – divided
1/4 cup apple cider vinegar
1 tbsp sugar free syrup
Dried Sage to taste

Mix 1/2 of mustard with a dash of salt and pepper, rub over pork.  Spray oven safe skillet with non-stick cooking spray and brown all sides of pork.  Transfer to a 425 degree oven for about 10 mins

Set pork on cutting board to rest.

Over medium heat, put skillet on medium burner and add vinegar – making sure to get all the brown bits up. Bring to boil.  Add in syrup, a little water and remainder of mustard. Add Sage to taste. Bring to simmer until sauce has thickened. Pour over pork

Serve with half cup of brown rice and veggies for complete meal!
