Roasted Garlic "Mashed Potatoes"

It's Day 2 of Thanksgiving Week at UFG headquarters!
Much of your caloric intake on Thanksgiving is no doubt, from sides! Mashed Potatoes are a huge source of fat and calories:  starchy potatoes, sour cream, butter, heavy cream or whole's a mess of fatty deliciousness. 
I'm a mashed potato fiend, so based of the yummyness of the Baked Potato Soup, I came up with these delish Roasted Garlic "Mashed Potatoes."   Using one potato with the skin on, and 2 cloves of roasted garlic, they really do stand up to regular mashed potatoes!

12 oz bag frozen cauliflower (thawed)
1 medium russett potato, skin on
2 cloves roasted garlic   (spray with non stick spray, wrap in foil, bake at 425 for about 20 mins)
2 tbsp Fat Free Sour Cream
1 tbsp Smart Balance

Pierce and microwave potato for 5 mins.  Dice with skin on and add to a bowl with cauliflower, garlic, sour cream and smart balance.  Puree all ingrediencts to desired consistency (I like it a little chunky).

Calories: 72 per serving (makes 3 servings)
