Asian Chicken and Vegtable Stir Fry


Happy Holidays, UGF'ers! This season has been so busy for me, I apologize for neglecting my blogging duties!
I saw a great quote the other day that said: "You don't have to lose weight over the holidays, but you don't have to gain weight either."  What a great quote!  I encourage you to live by this during your holiday parties.  It's ok to cheat a bit, but keep up with your exercise, and make good choices when you're in control of your food! 
Now, on to today's recipe!  This one is perfect for people on the go!  It takes less than 30 minutes and most of it is microwaved! I love using vegetables that come in a sauce and adding to it.  It's a little high on the sodium, so make sure to have a tall glass of water along with this meal!

Shepherd's Pie





 Friday!  I know, I've been lax on blogging this week - but a girl's been busy!  Holidays are filled with visiting friends, late nights out, and wanting to sleep in!  Unfortunately, I haven't exercised as much as I would have liked this week, but tomorrow is a new day, and it's time to set that alarm and just get it done!

Holidays are also the time for comfort food.  As the wind gets colder, and rain turns into snow, something warm and fuzzy like shepherd's pie is the perfect winter meal!  This version uses lean ground turkey, plenty of veggies and sweet potatoes to keep it lean, yet filling and delish.

Turkey Burgers



Happy Monday!  Great weekend in UFG land.  Friday night, the mailman and I checked out a new bar in town called 1984.  Awesome place - good beers, and vintage arcade games!  I was very good and stuck to my calorie count, tracking each beer as I drank it so as to not go over my daily calorie intake!

Saturday night was my family's Italian 7 Fish Christmas Eve.  I took my food scale, weighed my meal, and still had enough calories left to have a few drinks and a slice of my Mimi's famous pound cake!
Just goes to show you that you CAN go out, socialize and have a good time, without ruining your diet!

Now, onto today's recipe.  Another burger!  This turkey burger uses grated zuchinni.  It not only ups the nutritional count, but it also ads some texture, bulk and I think moisture to lean turkey.  It's a great addition to a filling burger!

Garlic and Lemon Chicken Thighs


Happy Friday, UFG'ers!  This week has flown by - much like this year!  I feel like my friends and I are just getting over saying how much fun we had last NYE, and now we're booking this one!

At any rate, I've been seeing these Tyson Boneless, Skinless Chicken Thighs at the market, and I was curious about them.  Although the mailman isn't the biggest fan of dark meat, I love it, and this recipe seemed to be the perfect solution.  We both really enjoyed it, and it makes a fantastic Sunday dinner.  

I found this recipe in a Mediterranean cookbook that I have, and have lightened it up, UFG style!  If you love garlic like we do, you'll adore it.  It takes 20 cloves!  Yum! Recipe after the jump!

Buffalo Chicken Burgers


It's only recently that buffalo wings have become one of my top 5 favorite foods.  As a kid, I hated spicy food.  Even ground black pepper was too much.  Now, I crave it.  Especially wings!

Insider Tip:  The best thing on the Buffalo Wild Wings menu?  Naked Tenders with medium buffalo sauce and substitute buffalo chips for fries!  Pair it with one light beer, and you've got a night out that won't kill your waistline!

If you haven't noticed, I'm obsessed with anything that can put into burger form - and ground chicken is SO versatile (and I clearly stock up when its on sale)! These Buffalo Chicken Burgers really kick the craving for wings, and is far cheaper than going out to Buffalo Wild Wings!  The mailman and I eat it with celery of course, and you could even serve them with some baked sweet potato fries!  Enjoy!

BodyFit Media Link Armband

It was big weekend in the UnFatty Gaby household!  First, it was my anniversary with the Mailman!  We had so much fun, and I splurged quite a bit - but once a year won't kill me!
Second, we decorated for Christmas!  The tree is up, the bay window is decorated and we're really getting into the spirit of the season. 



Third, I finally started with my BodyFit Media armband!  The technology behind this thing is really incredible.  It tracks your steps, calories burned, and more.  You input the foods you have eaten, and based on calories burned, it lets you know how many more calories you need to eat that day to reach your goal.  Mine is 1lb per week, and my diet buddy Beth's goal is 1.5lbs per week.  If all goes well, I'll be to my goal weight by June! 
We both missed our calorie burn goal by a couple hundred, but it was Sunday after all, a day of rest!  Hopefully I can make up for it tomorrow with some extra calorie burning.  


 It will be an adjustment tracking everything I eat - even fruits and veggies which I'm not used to counting.   I look forward to sharing my progress with you to keep myself honest and accountable!

Tre's Stuffed Zuchinni Bites



Lots of news to share you all!
1) I'll finally be back to a regular blogging schedule!  Life is moving so quickly, I can hardly catch up.  This weekend, cooking is the name of the game.
2)  My good friend Beth and I have given ourselves quite the challenge.  We've both bought the BodyMedia Fit Armband System and are hoping for big results!  We will be starting on Sunday (conicindentally, the same day we are going to a grand opening for a new bar, oy!) and are hoping to get to our goal weights by the summer.  I'll be keeping you updated on our progress on here, and will surely dedicate an entire blog to the system as soon as I have it figured out!
3) We have our first guest recipe!  My lovely friend Theresa sent me this recipe for which she is quite famous for!  The mailman and I both loved them, so I'm happy to present to you: Tre's Stuffed Zucchini Bites!  Tre uses the Garlic & Herb Laughing Cow, I used half Chipotle and half Mozzarella & Basil Laughing Cow.  They all work wonderfully, so play around and find your favorite!
