Asian Chicken and Vegtable Stir Fry


Happy Holidays, UGF'ers! This season has been so busy for me, I apologize for neglecting my blogging duties!
I saw a great quote the other day that said: "You don't have to lose weight over the holidays, but you don't have to gain weight either."  What a great quote!  I encourage you to live by this during your holiday parties.  It's ok to cheat a bit, but keep up with your exercise, and make good choices when you're in control of your food! 
Now, on to today's recipe!  This one is perfect for people on the go!  It takes less than 30 minutes and most of it is microwaved! I love using vegetables that come in a sauce and adding to it.  It's a little high on the sodium, so make sure to have a tall glass of water along with this meal! 





Ingredients:  (makes 2 servings)
1 bag of Birds Eye Steamfresh Asian Medley Mixed Vegtables
6 oz raw chicken breast, cubed into bite sized peices
1 tsp toasted sesame oil
1 tbsp low sodium soy sauce
1 tbsp fish sauce
1/2 tbsp teriaki sauce
6 oz cooked brown rice

Spray a large saute pan with non stick spray and heat over medium heat.   Add in sesame oil.  Add chicken and cook through.  While chicken is cooking, put veggies in the microwave for a minute under the specified time.
Add the vegtables to the chicken, making sure to get all the sauce out of the package.  Add soy sauce and fish sauce and sautee together for about 5 mins.


Serve stir fry over 3 oz cooked brown rice and drizzle with teriaki sauce.
