I've been MIA (again) - here's an update!


Happy Monday, UFG'ers.  I've gone MIA again, I'm sorry!  The holidays this year have been NUTSO for me!  It's been so busy, that my Mom and I actually had competing holiday get togethers yesterday!
The good news is that my Christmas shopping is done and on December 27th - my schedule frees up and I'll actually be able to experience some much needed free time!
I haven't, however, been so elusive (illusive? I never know which one to use...) on my Facebook page - so be sure to check it out!

Baked Brie Bites




Happy Monday, UFG'ers!
This weekend marked the 3 year anniversary for The Mailman and I. We celebrated at a mustache party.  This is what love looks like, friends:

The holiday season is full of entertaining.  These Brie Bites will be perfect additions to your holiday party!  I served them for my book club and they were a huge hit! The jam I used was delish homemade peach jam from my Mom - but it's easily substituted with apricot sugar free jam from Smuckers!  This recipe is chock full of ingredients from Trader Joes.  If you were wondering what an Unfatty might want for Christmas - I would recommend this:

Review: Trader Joe's Reduced Guilt Brownies


Happy Thanksgiving, UFG'ers!  Do you have plans to stay healthy this holiday?  You should - and you CAN with today's review! These are pretty much my new favorite thing.
Life is busy as usual in the UFG household.  I've found a new doctor who is really sitting down and listening to me and we have a new plan of attack for Mission Why Can't Gaby Be UnFatty! I'm very excited to be going to Progressive Health of Delaware and appreciate their approach more than they know.

On to today's review.  These. Are. Awesome.  I made them into brownie bits for a book club meeting and they could not have come out better.  TWO INGREDIENTS! And - you can pronounce everything in the box mix!  There are even instructions for a single serving size.  Incredible. Instructions after the jump:

Shredded Ranch Chicken


Happy Election Day, UFG'ers!  I hope you take the time to get out and vote today.  No matter which way you lean, it's an important thing to do!
Between weddings, babies, and family and networking functions, The Mailman and I have been busy as usual!  I'm still loving my classes that I'm taking, but felt like I needed a little more.  So, if you follow me on Facebook you know, I bought an under the desk cycler!  I'M SO PUMPED ABOUT IT! Last night, I cycled during Wheel of Fortune and brought it to work with me today.  Check it out:
Today's recipe is awesomely versatile! After shredding the chicken, there's numerous things you can do with it! I put it over salad, added greek yogurt and made ranch chicken salad, warmed it up and put it in a low carb tortilla with some shredded cheese, and added it to some Shirataki noodles with some fat free cream cheese for ranch chicken pasta! Group Classes > The Gym


Oh hey UFG'ers! So... I've been taking classes.  The above picture is the story of my life.

So.. the first class I took was TurboKick with Joanie Fit.  I'm in love.  Although I no longer take it with Joanie (money's tight, y'all), she is amazing.  TurboKick is amazing! A fast paced, ass-kicking, sweat-inducing workout.  Joanie is incredibly motivating.  She also does a bootcamp and some other classes. So definitely check her out if you're in the area.

Baked Hard Boiled Eggs



Long time no see, UFG'ers!  I've been pretty active on my Facebook page - so be sure to check me out there!
So - here's the latest:
I got an endoscopy and colonoscopy.  I'm allowed to love Gluten! yayayay!  That's VERY good news! The not bad but not great news? They didn't find anything wrong with my insides besides a bit of gastritis that I had years ago.  So I have a follow up appoint for the GI doc next month.  In the meantime, the low-carbing continues.  I swear its the carbs that mess me up!
In fitness news - I've been taking so many interesting classes that I can't wait to share with you - it will be another blog for another time - but I'm loving it!  The gym is so boring to me and I can't motivate myself to get there.  But what I can motivate myself to do? Have fun! All these group classes have been a blast - fast paced, music, dancing, toning! Loving it. I'm actually dripping in sweat when I'm done - unlike when I go to the gym, ha!
On to today's recipe.  It's more of trick.  Thank YOU Pinterest!  I eat hard boiled eggs for breakfast every morning.  I hate peeling eggs.  Hate Hate Hate.  Well, did you know you can hard boil eggs by BAKING them!?  Yup.  They are easier to peel, have fluffier yolks and heartier whites.  At least I think so.  Check it out after the jump!

Cloud (Carb free) Bread


Happy Tuesday, UFG friends!  Today's recipe is very interesting - and I'm anxious to get to it.  
Tomorrow is my GI doctor appointment.  I'm nervous, I'm anxious, I'm excited, and I'm scared.  I'm excited to (hopefully) finally figure out what's wrong with me, but I'm scared to death of the diagnosis.  No doubt, tomorrow will change a lot of things. 
In fitness news - I got super duper bored of the gym.  I started trying some different classes to get me out of my funk! Blog to come soon - but so far, Zumba, Turbo Kickboxing, and something called Skinny Barre have all been taken.  I have a few more different classes to take - and then I'll blog about my experience. It's been so interesting to try all these classes - I can't wait to share it with you! 
In professional news - I'm officially a published Marketing professional.  Very exciting.  Big ups to my bff Megabites for the opportunity! 
On to this Cloud Bread.  I'd seen it on Pinterest a bajillion times, and finally decided to try it.  You know what?  I love it! I used it with tuna, with a burger, and for a breakfast sammie.  It's not reallllllllly bread - but it does the trick.  I'm definitely planning on adding some spices to it and jazzing it up.  Recipe after the jump!

Bacon Wrapped Honey Mustard Chicken


Happy Monday UFG'ers! Not too much life news to report.  GI appointment next week - I'm very nervous but will be glad to get everything figured out.  While talking with my friend Gina, who was recently diagnosed with Celiac, she told me I have many of the symptoms.  Fingers crossed that's not it!  Gluten free is expensive y'all.
On to the recipe! These are awesome.  If you wanted to make your own honey mustard - be my guest.  I just bought a bottle from the store.  The combo of sweet and salty can't be beat.  This has become a Mailman favorite.  Hope you enjoy!

Chicken Parm Quesadilla





 Happy end of Summer\beginning of Fall!  Fall means pumpkin flavored EVERYTHING and I can't wait! I've already had my first pumpkin spice flavored coffee - black of course!

So this past Labor Day weekend, my BFF and partner in foodie crime, Megabites and her hubster Dave were in from Louisville.  I was beyond super stoked, because I rarely get to see them - and then Meg and I took this picture (next to a sign of the pool where we met as toddlers..) - and holy crap that's not how I look in my head.  What the what with the cankles!?  And don't get me started on my arms...
Megan is a food blogger - as in she goes and eats at restaurants - and I'm a healthy food blogger - please tell me based on this picture you wouldn't think it was the other way around... ugh.
I promptly made an appointment with a GI doctor.  It's time to get this 'ish straightened out! Without doing anything differently, I've managed to gain back the 4lbs that I had lost on the no carb diet. Not. Eating. A. Single. Carb. Lame....
I'm one class in on a 4 class super hard turbo kickboxing class (www.joaniefit.com) and can't afford to continue after 4 of them, but I'm trying to work out something with my buddy Tony to see if he can train me in return for help with marketing his business.  Something's gotta give!

Caprese Chicken Burgers






Happy Hump Day UFGers!  So I've been carb free for 3 weeks - and I'm 4 pounds down! What started as a week experiment has really turned into the most healthy thing I've done.  My digestive system is better, I'm feeling better, and best of all, ACTUALLY losing weight!
I can't say enough how wonderfully supportive The Mailman has been.  It's made this whole transition so much easier. 
The struggle has been coming up with creative carb free recipes to share with you all.  I'll admit - I've been drawing a blank.  It's been a lot of salads and protein in my life, and nothing really too creative.
This burger is one that I just haven't gotten around to putting up.  Holy crap it's awesome.  My love affair with fresh herbs and sun dried tomatoes is well documented - and this burger is no exception.  I served it on a lite english muffin and with half a Weight Watchers Garlic and Herb cheese wedge.  Deeeeeeelish! Dijon Herb-Stuffed Chicken

Happy Tuesday, UFG'ers! The Mailman and I have a big few weeks coming up and I couldn't be more excited.  We're going to the Firefly Music Festival and then vacation with my family up in the Adirondack Mountains for a week! A week of no phone, no tv, no social media....wonderful!

In the wake of all this wonderfulness, I've been feeling a bit down.  I'm lucky to have had a few incredible friends that have stuck around for years.  Rachel is one of them.  Rachel is the person you've always wanted to be.  Not only has Rachel been in my life for 18 years, but her Mom, Karin,  has been in my life as well.  This blog is dedicated to  Karin.  Diagnosed in 2009, Karin is battling colon cancer in the most graceful, amazing way.  Her battle is coming to an end.
Everyone knows it takes a village to raise a child.  I've been lucky enough to have Karin as a part of my village.  I'll forever be grateful and blessed for that.  I don't know if Karin likes roasted chicken - but here's my reasoning for dedicating this particular recipe to Karin:
Roasted chicken, to me, smells like love.  There's no better scent than walking into the house when a chicken is roasting in the oven. It's comfort. It's home.  Karin's house to me, growing up, was just like home.  Karin is and always will be love.

Pineapple Chicken






Happy Hump Day, UFG'ers!
Last night, The Mailman and I did the most fun activity of our summer so far: A movie on the roof of a grocery store! (And my favorite grocery store at that)  We watched JAWS on the roof of the Shop Rite in Wilmington. So awesome.  I had never seen the movie, and have never watched a movie on a roof - so a win/win all around!  Summer is a great time in the city of Wilmington, De!

I'm pretty excited to share this recipe with you today.  The Mailman thought it was Asian inspired, I thought it Hawaiian, so make it and let me know what you think!  I could literally eat this everyday it's so good.

Mexican Turkey Burgers





Happy Friday!
If you've been following me since the beginning, you know I love burgers.  Any kind of burger, really.  I'm always looking for different ways to make turkey burgers.  Turkey, by nature, is a really bland meat and can get really dry if you don't treat it properly.  These Mexican Turkey Burgers stay moist by using raw poblano peppers and fresh corn off the cob.   Spice them up with as much cumin and chilli powder as your palate can handle and man are they delish! I chose to top mine with avocado (I could eat them like apples) instead of cheese, but some pepper jack would work great on these.
A note:  A mistake a friend recently made buying ground turkey - buying 85% lean.  Although still better than ground beef, I prefer  and use the extra lean.  It's easier to dry out, so you really have to get creative with it, but you save calories in the end and can pepper them up with cheese, avocado, or use a regular bun.  So make sure you're reading the nutrition facts in the grocery store so you know what you're buying!

I Failed At Cauliflower Pizza Crust



Well, UFG'ers - it's officially summer.  A\C is pumping and I'm in a constant state of glowing.  Summer also means it's sun dress time - my favorite!
So I did a lot of cooking this weekend.  First up was something I've waited a long time to make - cauliflower pizza crust.  Now - mine failed.  BUT! My failed because it was too thin.  Stick to a 9" round pan, and this recipe is awesome.   The Mailman isn't a big fan of cauliflower, so I think he was glad that my crust fell apart, but I'll definitely be making this for myself.  Give it a try and play around with it - let me know how you find it!
NOTE: I'm no longer listing calories.  It was brought to my attention by someone who knows her stuff that everyone counts calories differently.  For example, I don't count veggies or spices.  Some do.  It's a science, and I'm no scientist.  However, continue to trust that every recipe I post is healthy.  It's low calorie and it will help the end result! Feel free to copy and paste my recipes into whatever you count your calories with!

UFG Creamy Pesto


Happy Hump Day!

Let me start by telling you one of my favorite things about summer:  Herbs from my garden.  I always do the staples: Basil, Mint, Rosemary and Parsley.  Amazing.  I put them in and on everything. 
Imagine my shock and sadness when I looked up how many calories are in my favorite summer time savory treat ever, Pesto.  SHOCK AND SADNESS, friends!

Well, I fixed that right up with my UFG Creamy Pesto.  It only uses 1 tbsp of olive oil (so make it a good one!) and fat free ricotta.  Holy crap is it delish.  I use all the herbs.  Every single one of them.  Not just basil.  So be creative with your pesto - change it up! Every result is amazing.

I'm pretty sure I'll be eating this all summer long.

Summer Crab Soup


Happy Friday!
First, a little update on moi. I've been diagnosed with tonsillitis.  Bad for my throat - great for my diet! ha!  The Mailman has almost finished the basement and it looks great - hopefully we'll be healthier now that we're not breathing all that mold in anymore!
On to today's recipe.  I live near the Chesapeake Bay - and summer to me means crabs! My cousin has a crab fest every summer, and we sit in their yard picking and eating delish local crabs.  It's THE best.
This is a really light soup - and I'm not someone who minds soup in the summer.  It's chock full of crab and deeelish. It's all about the stock that you use - and I used a superb lobster stock that I had made and stuck in the freezer - so be sure to use a good one! Hope you enjoy!

You may or may not have noticed that I've been M.I.A lately. Let's hope you have. Well: it boils down to my month of Murphy's Law and total dance card fullness. Guys, it's really hard being so in demand.
First, The Mailman and I had back to back to back to back Family parties that we planned. 

Then...the basement flooded. The Mailman's prized man cave. It had to be gutted (partially) and is getting totally redone. Oh, and Lew is doing it on his own. I'm trying to help but have been derailed Stressssss.

Chocolate Covered Cake Balls



A decadent dessert on a Friday?  You're Welcome!  It's hard to believe that these cake balls are only 22 calories each - but they are - I promise!
Not only are these puppies super low in calories, they are super rich - so the Mailman and I can only eat a few of them before it's too much. 
In personal news - as the school year winds down here in Delaware, a big shout out to my Mom who is retiring this year!! There's no doubt that my sister and I learned the value of hard work from our Mom - who has dedicated countless hours as a guidance counselor and then assistant principal for her school district.  Congrats Mom!!

Mini Corn Dog Muffins



Happy Monday, UFG'ers! Hope everyone had a great weekend.  The Mailman and I had a weekend packed full of activities.   Can life slow down, please?

This recipe was something I saw on Pinterest.  It was done with full fat everything - and I thought that this would be the perfect recipe to lighten up! At only 33 calories each - these are going to be perfect for your next summer get together - kids and adults alike.  I used a mini cupcake pan, but you could easily adapt the recipe to make full size cupcakes. 
...and with cornbread this easy - there's no need to buy frozen, fried corn dogs again!

Apple Chicken Sausage



It's Friiiiiiiiiiiiday!  I know I say this every week, friends - but geez is time flying.  Does that mean I'm old?
This week has gone by so quickly I can hardly believe it. 
Today's recipe is now a house favorite.  The mailman has the same breakfast every morning: egg beaters, turkey bacon and weight watchers cheese on either a whole wheat english muffin or deli round, 2 yogurts and a banana.
Well....we ran out of turkey bacon. 
A small problem to the rest of the world - but a huge issue for the mailman. He's a creature of habit...
So...I made chicken sausage!
Now, to all you professional cooks out there - I used a Red Delicious apple.  The SHAME! An eating apple for a cooked recipe?  That's right.  I did it.  It's the apple I had on hand, and it was on sale.  (Professional cooks would have used a granny smith, or something "more hardy")

Broccoli Mac and Cheese




Happy Wednesday, UFG'ers! I hope you all had a wonderful Memorial Day weekend.  The Mailman and I had a weekend packed with friends and family. 
This weekend I made this mac and cheese for a family bbq at my sister's house.  It went over very well, and the secret?  Boiling the pasta in milk! It's a little work intensive, as you have to keep stirring the pasta, but the milk reduces and gets creamy and delish.  Very little cheese is actually needed!
The calories in this dish are a little more than I would like for a side dish - but it is cheese, noodles and milk, after all!  What you're not loosing in calories, you're loosing in the massive amount of fat and sodium that are in store bought or restaurant bought mac and cheese - so keep that in mind!

Stuffed Portobello Turkey Burgers






Happy Friday UFG'ers!  I can't believe it's Memorial Day weekend already!  Time to go swimsuit shopping (ugh...).
Every weekend, I go to the Farmer's Market and stock up on tons of fruit and veggies.  It's one of my favorite things to do.  (Not to mention the adorable puppies that are also there...)  This past weekend, they had a ridiculous sale on portobello mushrooms.  Now I LOVE mushrooms, but they aren't the mailman's favorite - so I knew I'd have to do something spectacular with them to entice him.  These did just the trick! The porotobellos are hardy enough to stand as the "buns" and the turkey on the inside is moist and delicious.  Be prepared - they are JUICY! I had to use a knife and fork because juice kept running down my arms!

Crystal Light Peach Bellini

Crock Pot Chicken Curry






Happy Wednesday, UFG Fans! My apologies that it's taken so long to get a blog up this week!  As always, the Mailman and I have been crazy busy - add to that Mother's Day festivities, an awesome 30th birthday party for the Mailman's sister, and a broken sump pump - it's left little time for blogging! 

At any rate - this Crock Pot Chicken Curry is delish, and it couldn't be easier to put together.  I paired it with brown rice, a bell pepper and tomato salad and a 1/4 of a potato that I needed to use.   As always, your feedback is encouraged - I'd love to know how this recipe works out for you!

Spanakopita Cups



Happy Friday, UFG Fans!
So - here's the latest on the detox diet.  I had to stop.  I lost 4 lbs in 3 days, and then had to get blood work done, and didn't want the results to be skewed.  All in all, here are my thoughts:
  • The first 3 days of this diet are where it's at.  Never with anything have I felt more cleansed than I did on the first 3 days of fruits and veggies.  And really - how bad can only eating fruits and veggies be?!
  • I haven't lost 4lbs since I was on Jenny Craig.  For the past 3 years, I've been steadily gaining weight, no matter what diet I've tried.  So to me, 4lbs is 4lbs and I'll take it. 
  • If this helps me not look bloated and fat at my niece's christening, then I'll be all over the first 3 days again before the event.
So there you have it!
Now on to today's recipe.  It was requested by my friend Amy for more Greek food, so here you have it - Spanakopita cups!   Perfect for a party or appetizer, these little nuggets of Greek are deeeelish.  Next time I make them, I'll probably add a clove of garlic and some nutmeg in there for a little more flavor, but they are great as is.  Recipe after the jump!

7 Day Detox Diet...or, I'm a crazy person





Well, UFG'ers, it's official.  I'm crazy.  I told myself I was going to do this diet.. and by golly, I'm doing it.  But holy crap am I hungry.
So we all know Pinterest, yes?  (I'm there!) My flugal buddy Tricia posted this 7 Day Detox Diet, and I became intrigued.  After a forced Big Mac while babysitting one night, I needed a detox in my life.

Review: Body Fortress Super Advanced Whey Protein


Happy Hump Day!  It's rainy and gray here in Delaware today, and I know I'm going to have trouble going to the gym after work.  Good thing I have my  Body Fortress Whey Protein Shake to give me the boost that I'll need!

I love this stuff.  I had read a few blogs awhile back saying that drinking a protein shake not only helps build lean muscle, but it helps break down fats in your system.  I have a super slow metabolism and need all the help I can get.  So I set off in search of the perfect protein shake.

Shrimp Burgers



Oh hey, Monday!
How was everyone's weekend?  Lots of celebrations in my family this weekend, all kicked off with a wicked migraine.  I had NEVER had a migraine in my life, and man do I hope I never have one again.  Horrible. 
At any rate, I'm super excited to share this recipe with you today.  It's something that I've been conceptualizing in my head for quite awhile, and I'm so glad they turned out so well.   You may notice that these shrimp burgers don't come with a sauce.  That's because they don't need one.  They are so juicy and succulent and you'll be licking your fingers clean!

Pineapple Upside Down Cupcakes




Happy Friday!  I hope everyone had as wonderful as a week as I've had! I made my first adult purchase - a new car! (well, new to me...)  It was desperately needed, and I'm so excited to finally have a good, reliable car.  Big ups to my bff Megabites Louisville for selling me my now "old" car in a pinch when I moved home to Delaware from NYC 3 years ago!  Enough of that - onto today's recipe.

How about a dessert to start your weekend off right?  How about a 100 calorie pineapple upside down cake?  Yessssss!  These are awesome.  I adapted a tried and true Weight Waters recipe for using Angel Food Cake Mix and a can of crushed pineapple in juice.  Add a maraschino cherry and some sugar free caramel topping and you have a delish pineapple upside down cupcake!  They are enthusiastically Mailman approved, and I hope you like them!

Rooster Wraps


Happy Monday, UFG'ers!  I'm so excited about today's recipe.  It really was an "ah-ha" moment for me.  The mailman and I have a favorite restaurant in North Wilmington called Ulysses Gastropub.  It's always a special night out for us, and one of our favorite menu items there are their "Honey Rooster Wings."  They consist of chicken wings with a honey and Sriracha sauce.  They are unbelievably delish.
At first, I made my own version baking chicken wings instead of frying them, and then.... a stroke of genius that came along with a pack of boneless, skinless chicken thighs!  Rooster Wraps! These are surprisingly filling and the water chestnuts give them a great crunch, reminiscent of fried wings.  This recipe was enthusiastically mailman approved - and I hope you love them as much as we do!

Crystal Light Margarita Mix

In my constant dieting, there's one thing I've never been able to give up - and that's a good drink.  The problem with a good drink?  They tend to be extremely caloric.  Well, margaritas are caloric no more! At just 40 calories per PITCHER - these are a great alternative.

Indian Style Chicken Meatballs






Happy Monday, UFG'ers! 
Recently, my friend Matt spent some time in India.  It's no secret I loooooove Indian food, so he was nice enough to give me some spices that he had brought back with him.  Immediately, I had to look up what it is he had actually given me!
First, Curry Powder - an Indian staple.  I've already made curry egg salad - deeelish!  Second, he gave me a Masala Spice Mix.  This had 3 different packets of spices in it: Chilli Powder, Ground Turmeric, and Ground Coriander - that latter two I had never worked with before. 
After a lot of research, I decided chicken meatballs were the way to go! I ate mine over pureed cauliflower, but the mailman enjoyed his over brown rice.  These are a bit spicy and definitely have a Indian flair to them.  You could even add chickpeas to the sauce to add more protein and fiber!  Enjoy and please comment with your feedback!!

New Laughing Cow Garden Veggie Cream Cheese


I'm a big Laughing Cow fan.  Big.  We have all the flavors.  So, naturally, when I saw the new cream cheese flavors, I texted the mailman immediately and asked him which he would like, Veggie or Strawberry.  We chose Veggie and off I went day dreaming about what I could do with it!
Here's what the folks at Laughing Cow say about it:

Flavor to savor, indeed.  This stuff is great.  I ate it on a light english muffin, toasted with a piece of ham for breakfast.  Delish!   It really does taste like cream cheese and I love the subtle hints of the vegetable flavor.
Last night, I melted some down over shrimp and shirataki noodles.  Awesomeness.  I can't wait to buy another pack so I can try some sort of primavera dish!
This stuff is a must-try.  Is it a replacement for keeping fat free cream cheese in the house?  Certainly not - as buying the plain version would be more expensive than just buying a block of fat free cream cheese (not to mention that it's 1/3 less fat, and not fat free...).  That being said,  if you stick with the flavored ones and stock up when they are on sale - you won't regret it!

I'm baaaaaaack!


I'm back! So much has happened since I last blogged.  Let me catch you up:

1) When I decided to take a break from blogging - I had no less than 4 jobs.  4!  Ridiculous.  I had no time for anything.  My family, my friends, The Mailman, etc.  Since then, I've secured a FULL TIME JOB!  First one in 2 1/2 years that's not a commission based job.  Amazing.  So far I'm loving it and really enjoying have 1 job and 2  non-time consuming freelance jobs.  This leaves time for UFG and those who matter around me.

2) I've (finally) joined a gym.  With a full time jobby came a regular paycheck. Yessss.  I joined Planet Fitness (can't beat $10/month!) and it's right across the parking lot from work - so NO EXCUSES!  The new plan is to do a 20 minute workout in the mornings before work, and cardio at the gym after work - at least 3 days a week.

3) I'm a Godmother! The Mailman and I have been asked to be the Godparents of Baby Helena, my niece.  We are thrilled.  This gives me a month to not look gross in pictures.  Please see #2.   How stinkin' cute is this kid!?


4) I turned 29.  I have one more year of my 20's!  I'm determined to make it a good one.  I started working the month after I graduated college and I haven't slowed down since.  4 states, multiple jobs, and countless working hours later - I'm almost 30!   I've been a big ball of stress for about 6 years - and man am I ready to let that go!  This year - I'm going to slow down and enjoy life.  For the first time in 3 years, The Mailman and I are taking a vacation!  We're going to a music festival and have fun things planned for this summer.  ....And finally.. I'll have the time to enjoy it!

5) I'm changing the way I blog.  Not only will I continue to post Mailman approved recipes, but I'll be posting product reviews as well.  Whether it's a new food product, or a new workout, I'll be giving you my opinion!  Be on the lookout for my first review of the new Laughing Cow Veggie Cream Cheese!

So UFG'ers, let's get back on track! Time to move on from the past of a stressful, beyond busy life and start enjoying my last year of my 20's!  Join me?

Whole Wheat Cream Filled Donuts



Start back up with a donut recipe?  You know it!  These are amazing.  Done and Done.  These would be perfect for a brunch or holiday breakfast - and I promise you won't miss real donuts!  Please let me know what you think when you make them!

Ingredients:
For the donuts:
1 can evaporated fat free milk
1 packet active dry yeast
2 tbsp of Brommel & Brown butter spread (or similar) - melted
16 Splenda packets
1/2 cup Egg Beaters
5 cups 100% Whole Wheat flour
1 tsp sea salt
ground nutmeg to taste



For filling:
1 tub fat free whipped topping
1 packet vanilla sugar free pudding

In a small saucepan over medium-low heat, warm milk to around 95 degrees, stirring constantly to avoid scalding. Set aside 1 cup of milk, and pour the other 1/3 cup into a large bowl and add the yeast. Stir in briefly, then let sit for five minutes. Meanwhile, mix the splenda and butter into the other cup of milk. Add to yeast mixture, then use a fork to stir in egg beaters, nutmeg, salt, and flour, just until the flour is fully mixed into the batter.



With a dough hook, knead the dough in the bowl until it begins to pull away from the sides and becomes smooth and glossy. Lightly flour a working surface or counter and knead briefly, then shape into a ball, transfer to a bowl sprayed with nonstick cooking spray and put in a warm place to rise until doubled (about an hour).



Punch down and use a lightly floured rolling pin to roll the dough out into a 1/2-inch thick sheet.  Cut the donuts with the tip of a pint glass. Should make around 16 donuts.  Cover with a damp cloth and allow to rise an additional 45 minutes. Preheat your oven to 375 degrees and bake for 8 to 10 minutes or until the bottoms begin to turn golden



Take out of the oven and allow to cool.  While they cool - mix together and whipped topping and pudding packet.  Add milk as needed to thin it out.



When the donuts cool, use a frosting tip to push the filling into the middle of the donuts. 



Sprinkle with a bit of confectioners sugar and enjoy!
