Birthday Cupcakes for The Mailman!

Happy Monday, UFG'ers!  Today is the Mailman's birthday, so in honor of, cupcakes!

I had doubts about this recipe working - I know a lot of you have probably seen it before.  Diet soda with cake mix - a WW classic.  I lightened it up even more by using Devil's Food Cake mix and man - they were delish!  I used a non fat cream cheese frosting, but next time I make them, I'd probably skip the frosting and just add some fat free Reddi Whip on the top.  Chocolatey and yummy!  Recipe after the jump:

Chicken Rolls

Happy Friday, UFG'ers! 
Today, I'm bringing you a UFG version of one of my favorite cheat foods!  When I lived in Brooklyn and was on Jenny Craig, every Saturday I allowed myself to eat whatever I wanted.  (I still do this, and it's the key to my success!)
So, almost every Saturday, I would head down the street to the local pizza shop and pick up a Chicken Roll.  Ridculous NY pizza crust, a breaded chicken cutlet, TONS of cheesy goodness - yum! 
This UFG version really brought back some great memories of my time in Brooklyn, and I hope you enjoy them as much as I do!

Turkey Meatballs

Hey there UFG'ers! No joke - these meatballs are out of this world.  I wish I would have made an extra batch to freeze!   In the above picture, they are paired with 1 1/2 yellow squashes, 1 oz dry whole wheat pasta and 1/2 cup of red sauce.  Delish and filling.  Recipe after the jump!

Turkey Masala

Happy Monday, UFG fans!
This weekend, the mailman and I got 4 new exercise DVDs and multi-vitamins.  With one Bob Harper DVD, Jillian Michael's 30 Day Shred, Yoga DVD and a Pilates DVD - Project Health is well underway!  
Now on to today's meal.  I've loved Indian food for years, and it's a new favorite for the mailman.  Trader Joe's (man I love that place!) makes a great Masala simmer sauce.  Here's what I do with it:

Chicken Cheesteaks

Yes!  You read right - CHICKEN CHEESESTEAKS!  Consider it my weekend gift to you, my favorite UFG fans!
The mailman and I have had colds that won't quit for the past month.  We've been trading sicknesses, and now he, with his fancy health insurance,  finally got some antibiotics.  I, with no health insurance (doctors are for babies...and those with full-time jobs), am hoping that I can absorb antibiotic goodness by association.
At any rate - I discovered this raw, shaved chicken at Shop Rite.  They make pork, beef and chicken.  Amazing.  I also discovered whole wheat club rolls by famous east coast bakery Amoroso.  I can't find them often, so you can use whole what hot dog rolls, mini whole wheat pitas, or sandwich rounds as an alternative.

Crock pot Turkey Chili

Happy New Year, UFG Fans!  My resolution?  Get back on track - with this blog and with my armband!  The mailman and I splurged quite a bit over the holiday - and I wasn't prepared for how hard it would be to stay on track! 
In other news, my family welcomed a new addition - my niece,  Helena Joy!   I'm absolutely obsessed with her and can't wait to spend as much time as I can with the newest UFG fan! 

Now, on to today's recipe!  Winter means comfort food - but comfort food doesn't have to mean fat!  This turkey chili will warm and fill you up - without making you feel heavy and full.  I eat it without rice - but you can add brown rice for even more fiber power!
