Turkey Masala


Happy Monday, UFG fans!
This weekend, the mailman and I got 4 new exercise DVDs and multi-vitamins.  With one Bob Harper DVD, Jillian Michael's 30 Day Shred, Yoga DVD and a Pilates DVD - Project Health is well underway!  
Now on to today's meal.  I've loved Indian food for years, and it's a new favorite for the mailman.  Trader Joe's (man I love that place!) makes a great Masala simmer sauce.  Here's what I do with it:







Ingredients: (makes 3-4 servings)
1 pack of Turkey Breast Cutlets
1/2 can of Dark Red Kidney Beans
1 jar Trader Joe's Masala Simmer Sauce
1 box frozen Cauliflower
Cilantro for garnish

Rinse beans well.  Cut cutlets into bite sized pieces.  In a deep skillet,  Mix turkey, beans, frozen cauliflower and jar of sauce.  Fill the jar half way with water and add to skillet.  Cover and simmer on medium heat for 15-20 mins, or until meat is cooked and sauce has reduced.


Serve over 1/3 cup of cooked brown rice and top with desired amount of cilantro.  Yum!
