Turkey Meatballs
Hey there UFG'ers! No joke - these meatballs are out of this world. I wish I would have made an extra batch to freeze! In the above picture, they are paired with 1 1/2 yellow squashes, 1 oz dry whole wheat pasta and 1/2 cup of red sauce. Delish and filling. Recipe after the jump!
Ingredients:
1lb Lean Ground Turkey
1/2 small onion
2 cloves garlic
1/4 cup panko bread crumbs
2 tsp parsley
2 tsp basil
2 tbsp egg beaters
1 tbsp grated Pecorino cheese
Mix all ingredients together in a bowl. Form into golf ball size meatballs. Should make around 18 meatballs. In a skillet, spray non stick spray.
Brown meatballs over medium heat on all sides until cooked through.
Simmer in sauce, or enjoy on their own! Serving size is 3 meatballs.
