Mini Corn Dog Muffins
Happy Monday, UFG'ers! Hope everyone had a great weekend. The Mailman and I had a weekend packed full of activities. Can life slow down, please?
This recipe was something I saw on Pinterest. It was done with full fat everything - and I thought that this would be the perfect recipe to lighten up! At only 33 calories each - these are going to be perfect for your next summer get together - kids and adults alike. I used a mini cupcake pan, but you could easily adapt the recipe to make full size cupcakes.
...and with cornbread this easy - there's no need to buy frozen, fried corn dogs again!

Ingredients: (makes 18 muffins)
3.5 98% Fat Free Hot Dogs
1/2 cup nonfat plain yogurt
1/2 cup cornmeal
1/2 cup 100% whole wheat flour
1/4 cup egg beaters
1/2 tsp baking soda
1 packet Truvia
Preheat oven to 400 degrees. Mix everything other than the hotdogs together. The dough will be thick - so don't worry about texture. Separate evenly in paper lined cupcake tin. (Should make about 18 mini cupcakes).
Cut hot dogs up into 18 sections. Drop onto top of muffins. Bake for about 12-15 mins, or until golden brown. Serve warm.
