If you've been following me since the beginning, you know I love burgers. Any kind of burger, really. I'm always looking for different ways to make turkey burgers. Turkey, by nature, is a really bland meat and can get really dry if you don't treat it properly. These Mexican Turkey Burgers stay moist by using raw poblano peppers and fresh corn off the cob. Spice them up with as much cumin and chilli powder as your palate can handle and man are they delish! I chose to top mine with avocado (I could eat them like apples) instead of cheese, but some pepper jack would work great on these.
A note: A mistake a friend recently made buying ground turkey - buying 85% lean. Although still better than ground beef, I prefer and use the extra lean. It's easier to dry out, so you really have to get creative with it, but you save calories in the end and can pepper them up with cheese, avocado, or use a regular bun. So make sure you're reading the nutrition facts in the grocery store so you know what you're buying!

1 pack extra lean ground turkey
1 poblano pepper - seeded and diced
1/2 cup of fresh corn off the cob
Cumin to taste
Chilli powder to taste
Garlic powder to taste
Optional: 1/2 oz avocado per burger
Mix all ingredients except avocado.
Shape into 5 burgers. Spray skillet with nonstick spray and cook about 5-6 mins per side, or until done. Put onto 100 calories bun and top with avocado.
You could even serve with some salsa - yum!!
