So - here's the latest:
I got an endoscopy and colonoscopy. I'm allowed to love Gluten! yayayay! That's VERY good news! The not bad but not great news? They didn't find anything wrong with my insides besides a bit of gastritis that I had years ago. So I have a follow up appoint for the GI doc next month. In the meantime, the low-carbing continues. I swear its the carbs that mess me up!
In fitness news - I've been taking so many interesting classes that I can't wait to share with you - it will be another blog for another time - but I'm loving it! The gym is so boring to me and I can't motivate myself to get there. But what I can motivate myself to do? Have fun! All these group classes have been a blast - fast paced, music, dancing, toning! Loving it. I'm actually dripping in sweat when I'm done - unlike when I go to the gym, ha!
On to today's recipe. It's more of trick. Thank YOU Pinterest! I eat hard boiled eggs for breakfast every morning. I hate peeling eggs. Hate Hate Hate. Well, did you know you can hard boil eggs by BAKING them!? Yup. They are easier to peel, have fluffier yolks and heartier whites. At least I think so. Check it out after the jump!
Got a dozen eggs and a cupcake tin? PERFECT! That's all you need!
Preheat your oven to 325 degrees. Place the raw eggs in the shell in your tin. Bake for 30 mins.
They will have brown spots on them - this is normal - so worry not!
Once they are done, plunge them in icy water and enjoy!
These will be the best hard boiled eggs you'll ever have - I promise! AND they are super easy to peel!
